For 3 generations, the Fromagerie Gaugry has been offering high quality products, made using the authentic methods and skills of Burgundy. Located in Brochon, in the Côte d’Or, the Fromagerie Gaugry specialises in soft and washed rind cheeses, such as Epoisses, Soumaintrain, Ami du Chambertin, Plaisir au Chablis, etc. The current owners are continuing familial and Burgundian cheese making traditions, as well as expanding and modernising production.

EPOISSES AOP

The Epoisses AOP of fromagerie Gaugry is made from pasteurised cow’s milk. It was produced by monks in the sixteenth century, and loved by Louis XIV’s court. It was called the “King of Cheeses” by the first gourmet, Jean-Anthelme Brillat-Savarin. Epoisses is a cheese whose rind is washed with Marc de Bourgogne. It has a strong aroma with woody notes. Visually, its crust is slightly wrinkled and shiny. The exterior of Epoisses can vary from orange ivory to brick red, depending on the how ripe the cheese is. The interior of Epoisses is light beige and its texture is creamy and unctuous. If it is young, the heart may be slightly crumbly. On the other hand, it is creamy if it is well matured.

 

SOUMAINTRAIN IGP

Soumaintrain of fromagerie Gaugry is a cow’s milk cheese from Burgundy. It is a soft cheese that is rind washed in brine (salt water), which gives its crust a slightly orange ivory colour. The Soumaintrain‘s crust is naturally wrinkled and slightly powdery. The interior has a soft consistency, it is soft to the touch and both creamy and full-flavoured in the mouth. Soumaintrain is now recognized IGP (Protected Geographical Indication).

 

L’AMI DU CHAMBERTIN

Goes with: Serve hot with a salad and a red wine, such as Gevrey-Chambertin.

Created by Raymond Gaugry in 1950, the L’Ami du Chambertin is a soft, washed rind cheese, made with pasteurised cow’s milk. Its manufacture was inspired by the skills of the Côte d’Or farmers. Its name comes from the wine region in which it is made (Gevrey-Chambertin). L’Ami du Chambertin has a strong aroma, its crust is fine, supple, pleated and shiny and its colour is red to orange.
